Roasted Delicata Squash
Delicata squash are a sweet, mild flavored squash with a cream colored outter skin with green stripes. The flesh inside is usually yellow or light orange and very, very delicious. These particular squash were simply cut into eighths, topped with orange marmalade, salt and a little bit of butter and roasted at 400 degrees in the oven until golden in color and the flesh is soft and creamy. This was one of the best snacks created at my impromptu birthday potluck last weekend by Josh.
