Pacific Saury Sashimi
Also known as a Mackeral Pike, the window of eating this fish in the height of it’s natural perfection is about 2 weeks and I am so glad we happend to stumble upon it. The presentaion of the fish with it’s filets formed into a leaf pattern on the plate, along with the head and entire spine showed a real homage to the fish itself. Although it was served with fresh grated ginger, wasabi and soy sauce, none of these were needed. The meat had a perfect natural salt content and the flesh was lucious with a perfect oil content. Really the Pacific Saury is the whole package, as it come already seasoned and requires no cooking or condiments. A perfect example of natural perfection and proof that nature has a palate!
