Cured Beef Tongue.

Last weekend some of the guys I work with and I spent 24 hours eating our way around Portland.  I cannot express how much I love that city.  It’s small, but full of everything a foodie could want and more.  After spending time at The Cheese Iron and  Browne Trading Company, we headed to Miyaki, a small Japanese restaurant on Spring Street in Portland.  The Chef, Masa spent time working in Boston before opening up this place and most of his creations are incredible.  I had eaten there about a year ago when it first opened and had a mixed experience of great things and not to great things, but this time almost everything we ate (which was most of the menu) was pretty incredible, with one exception.  Their BYOB  policy keeps the bill down, which was great considering we probably ordered 12 items between the 4 of us, but we also had to keep up with the 4 bottles of sake we purchased beforehand.
The beef tongue pictured above (and i apologize for the quality of the photos of this night, apparently after 2 bottles of sake i’m officially a bad photographer) was cured and cooked quickly served with a japanese 5 spice blend on top.  THe meat had an incredible consistency reminiscent of steak.  It was really delicious.
