Braised Artichokes
Although the story of creating these delicious artichokes will remain in my repitoire forever (let’s just say i almost burnt down josh’s kitchen, literally) I’m glad I will remember so I can recreate it once again. Since I didn’t deep fry ALL the artichokes last weekend, I figured I would try another technique on them. I split them in half, then patted the exposed inside with seasoned (salt and pepper) flour. i seared the exposed part in hot, hot oil until nicely brown. Exposed half up, i placed the chokes in a baking dish with mint, basil, lemon, sake, white wine, salt, pepper and parsley. I covered it with aluminum foil and let them braise in the oven at about 350 for 30 minutes, until tender. Minus the small fire inbetween, the recipe is very simple and the artichokes turned out great. The mint flavor came through very nicely, the artichokes were fresh tasting, and full of flavor.
