Anise Hyssop
A member of the mint family, anise hyssop has an incredibly sweet anise flavor. At the restaurant it is most commonly used for Tisane, an herbal infusion in water (think fresh tea.) The younger leaves are very tender and great to eat. Recently at work we steeped honey with mashed leaves and stems of the anise hyssop and drizzled that over figs that were roasted in the wood fire oven. We then took the tender leaves of the plant and tossed them in the with the salad that was being served with the figs.
